Saturday Sweets... Mississippi Mud Cake

Mississippi Mud is a dessert my family makes alot. It does not take long to make and it tastes delicious! There are many different ways to make it, but I am going to share my families recipe.

Mississippi Mud Cake
2 cups sugar
1 cup shortening
4 eggs
1 1/2 cups self rising flour
1/3 cup cocoa
3 teaspoons vanilla
1/4 teaspoons salt
small bag of marshmallows

Cream sugar and shortening, add eggs and beat well. Sift flour, cocoa and salt then add to mixture. Blend together well then add vanilla. Bake in an oblong greased and floured pan for 45 minutes at 300 degrees. When timer goes off take the cake and out and spread with marshmallows then return to the oven for 5 minutes or until they are partially melted. Cake will fall when removed from the oven.

Topping
2 sticks margarine
1/2 cup cocoa
1 box powdered sugar
1/2 cup pet milk
1 teaspoon vanilla
nuts (optional)

Sift sugar and cocoa then mix with melted margarine, milk and vanilla. Spread onto cake and wait 2 hours before cutting into squares.
